Peanut Butter Truffle Balls (Gluten and Dairy Free)

Peanut Butter Truffles says it all. This recipe combines the ultimate flavors, super easy to put together and is enjoyed by the littles and adults. 

These truffles are gluten-free and dairy-free. Loaded with nuts (peanuts and almond flour), they are a nutritional powerhouse! Even though nuts are high in fat they actually release satiety hormones because of their high fiber content and help control appetite.

The other magical part is that there is no added sugar. Instead of using sugar, this recipe calls for dates which are packed in nutrition. See below for more info. 

The chocolate is made from dark chocolate chips, without any added sugars. If you wish to make the chocolate creamier you can add coconut milk to get a rich chocolate flavor.

I like to top these with some Himalayan pink sea salt or flaky sea salt. You can also swap the peanut butter with other kinds of nut butter. If you have any caramel on hand, feel free to drizzle that on top! Shredded coconut would also be great.

HEALTH BENEFITS

Dates contain important vitamins and minerals but that’s not all. They have many more nutritional benefits such as:

  • Fiber: helps improve your digestive help by preventing constipation, also it slows digesting and helps control blood sugar levels
  • High in antioxidants such as flavonoids which may help reduce inflammation, carotenoids which promote heart health, and phenolic acid which also has anti-inflammatory properties associated with reducing the risk of cancer and heart disease.
  • Helps improve memory! Each date has over two milligrams of choline, a B vitamin that’s a component in acetylcholine, the memory neurotransmitter. Choline is associated with better memory and learning, great for kids and adults!

PRO TIP

Blend the water and dates first, it will be a lot easier this way. I really do recommend a high powered blender. I absolutely love my Vitamix. They’re not cheap but I’ve had mine for 10 years and it’s as good as day one. I honestly use it almost every day so well worth the investment.

Chocolate Peanut Butter Truffles

These truffles come together super easily and just require freezing, no baking needed!

Ingredients
  

  • 3/4 cup peanut butter
  • 6 pitted dates
  • 1/2 cup almond flour
  • 1 tsp salt
  • 6 tbsps water

Chocolate

  • 1 cup dark chocolate chips
  • 2 tbsp coconut oil
  • 2 tbsp coconut milk optional (makes the chocolate creamier)
  • flaky sea salt to sprinkle on top

Instructions
 

  • In a high powered blender or food processor add the pitted dates first and water, blend. Add the peanut butter, dates, almond flour, and salt. Blend on high speed until smooth.
  • Scoop into tablespoon-sized pieces and roll into the shape of a ball and place on a plate covered with parchment or wax paper. Repeat until all of the peanut butter mixture is used.
  • Put in freezer while you make the chocolate.
  • Mix all of the chocolate ingredients in a small pot. Cook on low temperature for a few minutes until the chocolate is melted. Stir to combine.
  • Roll the peanut balls into the chocolate mixture. Coat evenly.
  • Place the balls on parchment or wax paper and freeze for 20 minutes.
  • Sprinkle with salt if desired and enjoy!
  • Store these in the freezer or refrigerator.
