Easy Paleo Bacon Cauliflower Muffins (Gluten and Dairy Free)

Looking for something you could eat at any time of the day? Easy to prep and available when you crave it? Easy Paleo Bacon Cauliflower Muffins will answer all of your wishes. You can put these together quickly and have them on hand for the rest of the week.

Also enjoys these for lunch or as dinner muffins with a side salad and some avocado. You can eat them hot or cold which makes them ideal for a picnic at the park or a day at the beach. I’m telling you this will be your go-to muffins!

FREEZER TIP

Alternatively, you can freeze them for a busy week ahead. To freeze, just let them cool off, and store them in your preferred freezer container.

These are great for breakfast, I often go for two. I just pop them in the toaster oven or microwave when I get to work. They’ll fill you up and hit the spot. The best part is that they’re ready to go!

PARENT HACK

Muffins are such a great way to sneak in veggies and get kids used to the flavors. Of course, there is already cauliflower in these but feel free to chop up some spinach are add some cooked diced sweet potato.

PRO TIP

These freeze really well. You will thank your past self if you make a double batch.

If you’re not dairy free, by all means, replace the nutritional yeast with 1/3 cup of your favorite shredded cheese.

On the other hand if you’re a vegetarian, no problem, omit the bacon.

You can add a protein/collagen powder like this one if you want to ramp up your protein intake. Also, collagen has so many other amazing benefits!

NOTES

I like to use my food processor to chop up the cauliflower ingredients. It’s super quick and if your food processor is big enough you can just add in all of the other ingredients and process until smooth. 

It really helps to spray your cupcake liners with oil. I recommend using a mister that you can refill with your own oil so that you avoid all of the chemicals in store bought oil sprays.  

If you want an environment friendly cupcake liner that’s also safe for your whole family these silicone cupcake liners work great. I’ve had them for years and have used them for so many recipes.

Paleo Cauliflower Bacon Muffins

These Paleo Cauliflower Bacon Muffins are so versatile, you can eat them at any meal. They're great to cook in batch to have on hand for the week.

Ingredients Method

Ingredients
  

  • 3 cups chopped raw cauliflower florets
  • 3 eggs
  • 1/3 cup nutritional yeast
  • 1/4 tsp salt
  • 4 slices bacon, cooked and chopped
  • 1/2 cup cassava flour
  • 1/2 tsp baking powder
  • 1/2 tsp dried basil
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1 tsp fresh chives, chopped

Method
 

  1. Preheat oven to 375°F. Line a cupcake/muffin pan with cupcake liners. I like to use these silicone liners since you can reuse them. Spray them with oil so it doesn't stick. (This mister works great and you can refill with your favorite oil.)
  2. Cook bacon in the oven or a pan. Once crispy, chop up into small pieces.
  3. Combine cauliflower, eggs, nutritional yeast, baking powder, cassava flour, chopped bacon, salt, onion powder, dried basil, garlic powder, and chives (basically all of the ingredients). Mix with a large spoon or spatula until smooth.
  4. Fill up each liner about 2/3 full.
  5. Bake for 20-25 minutes.
