Paleo Instant Pot Short Ribs (AIP, Whole30, Paleo)

If you’re looking for a melt in your mouth dinner you have come to the right place. These Paleo Instant Pot Short Ribs have so much flavor and fall apart in your plate. These are amazing on top of cauliflower gnocchi, mashed sweet potatoes or your favorite gluten free pasta.

Short ribs are a tough meat and require a long cooking time. Luckily this dish can come together in less than an hour in the Instant Pot using the Stew/Meat mode.

If you are cooking bone in meat short ribs, put it on for 45 minutes. For boneless short ribs you need 35 minutes.

Once the Instant Pot is done let it naturally release pressure for 15 minutes and then open. You must be warned, when you open your instant pot it will smell delicious!

PRO TIP

If you would rather this cook while you are at work or away for the day, you can put this on the slow cooker mode and cook on low for 8 hours. Believe me you”ll try to get home as fast as possible!

If you have the time, I recommend browning the meat before cooking, it gives the dish extra flavor and seals the juices in.

SERVING SUGGESTIONS

You can serve this with so many things. You really want something that will soak up the sauce. The following would work great:

  • cauliflower gnocchi
  • cauliflower rice
  • mashed sweet potatoes
  • gluten free pasta
  • spaghetti squash

These short ribs cook wonderfully in your Instant Pot under an hour on Stew mode or on low for 8 hours.

Ingredients
  

  • 2-3 lbs short ribs bone in or boneless
  • 1 yellow or white onion, finely diced
  • 2 large carrots, finely diced
  • 6 garlic cloves chopped
  • 1 cup tart cherry juice
  • 1/2 cup bone broth
  • 1 tsp sea salt
  • 5 springs fresh thyme
  • 5 springs fresh oregano
  • 1 tbsp baking lard or avocado oil

Instructions
 

  • IP: turn on the saute function and add the oil. Sear all sides of the meat until brown.
  • Stove Top: heat oil in a pan, sear all sides of the meat until brown.
  • IP: Take the ribs out the of Instant Pot and add in diced onions, diced carrots, and chopped garlic. Cook for about 2-3 minutes stirring a few times.
    Stove Top: Take the ribs out the of pan and add in diced onions, diced carrots, and chopped garlic. Cook for about 2-3 minutes stirring a few times.
  • Return the ribs to the Instant Pot. 
    If using a slow cooker, add the meat and vegetable mix to the slow cooker.
  • Add the tart cherry juice, broth, salt, thyme, and oregano to the short ribs and vegetable mix.
  • IP: If using the IP stew method cook for 45 min for bone in ribs or 35 min for boneless ribs. When it’s done let it naturally release for 15 minutes. 
    Slow Cooker: cook for 8 hours on low.
  • When the meat is cooked, shred with two forks. 
  • Let the juices sit in the Instant Pot and saute for 15 minutes to thicken. Alternatively, return the juices to a pan and cook down for 15 minutes.
  • Serve on top of your favorite pasta or mashed potatoes.
