Caramel Chocolate Chip Sheet Pan Cookies

You heard that right, Paleo Caramel Chocolate Chip Sheet Pan Cookies! Don’t you hate it when you get so excited to eat a nice warm homemade cookie and then you over cook it? I hate dry cookies!

Also why bother making individually sized cookies when you can just make one huge cookie!! If I didn’t have a conscious I would eat the entire sheet pan of cookies but I’m pretty sure my body would hate me for like a billion years. With these cookies you can cut the exact size you want and either nibble your way through them or be honest and just cut out one huge piece. And then another piece for good measure.

I brought these to my work holiday party and nobody could believe they were gluten and dairy free. My vegan coworker had to triple check and make sure there wasn’t any butter. She couldn’t remember the last time she had such a “buttery” vegan cookie. Guys it’s all in the paleo caramel, it just adds a whole other level of decadence. I promise you won’t want to skip out on it.

PALEO CARAMEL

This is the key ingredient IMHO. Sure you can skip it and make a classic cookie but who doesn’t want the ooey gooey deliciousness of caramel. The paleo caramel will ensure that your cookie stays soft and add a nice touch of sweetness. 

HOW TO MAKE PALEO CARAMEL

The most amazing part is that it requires only two ingredients, that’s right. Just canned full fat coconut milk and coconut sugar. It also takes no time to make! Just boil the two together, turn down the heat and let is thicken for a few minutes.

Paleo Sheet Pan Caramel Chocolate Chip Cookies

Ingredients
  

Paleo Caramel

  • 1/2 cup full fat coconut milk
  • 3 tbsp organic coconut palm sugar

Cookies

  • 1/2 cup almond butter
  • 2 eggs
  • 1/2 cup coconut sugar
  • 1 tbsp coconut oil
  • 1 cup almond flour
  • 1 tsp baking soda
  • 3/4 cup dark chocolate chips
  • maldon salt

Instructions
 

Paleo Caramel

  • In a small sauce pan mix together the full fat coconut milk and coconut sugar.
  • Stir continuously and cook on medium heat until the mixture comes to a boil. Once it boils reduce the heat and cook on low for about 2-3 minutes until the sauce thickens and goldens.

Cookies

  • Turn oven on to 350F.
  • Mix together eggs and sugar. I recommend using a hand mixer if you have one.
  • Add almond butter and coconut oil.
  • Once the wet ingredients are all mixed, add the almond flour and baking soda.
  • Stir in chocolate chips. 
  • Put the batter into a 8in x 8in pan. Pour caramel sauce over the batter. Use a knife to spread the batter into the dough. Sprinkle salt on top.
  • Bake at 350F for 15-18 min or until just golden. I recommend undercooking if you want the gooey brownie texture. Enjoy!
