Air Fryer Paleo Chicken Tenders

Why do kids love everything white, crispy and fried? My son will eat veggies, sometimes, but whenever I serve him chicken nuggets I never have to ask him twice to finish his plate.

These come together pretty quickly and cook super fast in an air fryer. The extra herbs give them an unexpected twist.

ARROWROOT FLOUR/STARCH

This is one of the magical ✨ ingredients I discovered when I cut out gluten. I love to use since it’s easily digestible, gluten-free, grain-free, nut-free, dairy-free, soy-free and corn-free! That’s was a mouthful! 

HOW IT’S MADE

The starch is extracted from the rootstock of several tropical plants, traditionally Maranta arundinacea. It can also be come from cassava root, Polynesian arrowroot or pia (Tacca leontopetaloides), and Japanese arrowroot (Pueraria lobata), also called kudzu.

HOW TO USE IT

You can easily use it when baking since it gives breads and cakes the elasticity often missing from gluten-free products. When combined with other flours such as coconut flour or arrowroot it creates a nut-free crumb for baked goods. Check out my 5 minute paleo bread, paleo naan or bagels. It also adds a nice crunch to crackers and works well to thicken sauces.

HEALTH BENEFITS

Arrowroot contains a good amount of potassium, iron and B vitamins, which is great for metabolism, circulation and heart health. Studies have even shown that arrowroot can stimulate immune cells and boost the immune system.

It’s also great for those dealing with autoimmune issues. Studies have shown that it can reduce diarrhea and constipation as well as minimize abdominal pain.

Make sure you buy quality arrowroot flour, here is my favorite brand.

Freeze a batch so that you can easily reheat for busy nights when you need to get something ready in a hurry.

NUTRITION TIP

Pasture raised eggs have a much higher nutritional value than conventionally raised eggs. They do cost more so maybe it can be a once in awhile treat.

In comparison to a conventional egg, pasture-raised eggs contain:

  • 3 times more Vitamin E
  • 2/3 more Vitamin A
  • 1/4 less saturated fat
  • 1/3 less cholesterol
  • 2 times more omega-3 fatty acids
  • 7 times more beta carotene

Air Fryer Paleo Chicken Tenders (Oven Baked Option)

Ingredients Method

Ingredients
  

  • 1 lb chicken breast tenders
  • 2 tbsp arrowroot starch
  • 2 tbsp coconut flour
  • 2 tsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1 tsp onion powder
  • 3/4 tsp salt
  • 2 large eggs
  • avocado oil spray

Method
 

  1. Mix all of the dry ingredients together in a bowl.
  2. Whisk the eggs in a separate bowl. 
  3. Dip the chicken in the egg bowl and then dip in the dry ingredients.
  4. Once the chicken is coated turn on your air fryer. Let your air fryer heat up for 3 min at 390F.
  5. Alternatively you can cook the chicken tenders in the oven at 375F. Spray a baking pan with avocado or olive oil and bake for 15 minutes or until cooked.
  6. Cook the chicken in batches. Layer the chicken in the air fryer, don't over stuff.
  7. Air fry for 7 minutes.
  8. Enjoy with AIP or normal ketchup!
