Apple Cider Marinated Beet & Orange Salad (Paleo, AIP, Whole30)

This marinated beet salad really hits the spot on a summer day. It’s cool, crunchy, and oh so satisfying.

On top of how delicious this is it’s also super good for you! Let’s take a look at how amazing beets are. 

HEALTHY BENEFITS OF BEETS

Did you know that beets have almost all of the minerals and vitamins you need? As a general rule of thumb, the brighter your vegetables are, the higher in nutrients they are.

  • Can help athletic performance thanks to its high content in nitrates.
  • May help inflammation
  • Beets are high in fiber which helps with digestion
  • High in potassium which is important in regulating blood pressure
  • Beets have a historical reputation of being an aphrodisiac. The nutrients (betaine, boron, and tryptophan) in them can make you feel better and possibly increase your libido.

COOKING TIP

Peeled Beets

I hate peeling and cutting beets because your hands always end up stained. I finally found a way to avoid that. You can pressure cook them with the skin on in the Instant Pot and then peel them. All you have to do is let them cool and then rub the skin off with paper towels. It’s a pretty neat trick!

SERVING SUGGESTIONS

These beets are delicious topped on greens such as arugula or mixed greens.

Additional Toppings:

  • feta or dairy-free feta
  • sliced avocado
  • can swap tarragon for the mint
  • diced strawberries

Marinated Paleo Beet Salad

Marinated Beet Salad (Paleo, Whole30, AIP)

Easy marinated beet salad is extra crunchy! Taste wonderful on a hot summer day.

Equipment

  • Instant Pot

Ingredients
  

  • 1 lb beets
  • 1/2 cup apple cider vinegar divided
  • 1/4 cup olive oil
  • 1 medium shallot finely chopped
  • 1 tsp chopped fresh thyme
  • 2 tbsp chopped mint or tarragon
  • 1/4 cup pistachios omit for AIP
  • 1 tsp salt
  • 1 orange peeled and quartered

Instructions
 

  • Trim the top and bottoms of the beets.
  • Add 1 cup of water to Instant Pot and 1/4 cup of apple cider vinegar.
  • Set instant pot to 15 minutes. Release pressure once done and let the beets cool off.
  • Once cool, rub skins off with a paper towel. Put the beets in a bowl and add 1/4 cup apple cider vinegar, shallots, thyme, and olive oil.
  • Let sit at least 2 hours to overnight.
  • Before serving add pistachios and chopped mint.
  • Beets can be marinated 2 days ahead covered and chilled.
