Vegan Cauliflower Tacos (Dairy-Free, Gluten-Free)

These cauliflower tacos will quickly turn into your go-to vegetarian tacos. The cauliflower bites are tangy with a slight sweetness. It’s hard not to eat them all before you even get a chance to turn them into tacos! 

HOW TO MAKE CAULIFLOWER BITES

But how do you make these crunchy? Good question!  

These delicious bites are coated in tapioca flour and rice breadcrumbs to give them that crunchy texture. I buy my rice breadcrumbs at Trader Joe’s.  If you don’t have any you can skip it and still get a pretty tasty cauliflower bite!

The sauce is a combo of spices, almond butter, maple syrup, and coconut aminos.

Once you dredge your cauliflower florets all that you have let to do is cook them!

HOW TO COOK THE CAULIFLOWER BITES

There are two options. You can either batch cook them in your air fryer or in the oven.

For the air fryer cook on 375 for 5 min, shake them around a bit and cook again for another 5 minutes.

If you prefer to cook the cauliflower bites in the oven, bake at 400F for 10 minutes. Take the pan out of the oven, flip the cauliflower florets over and bake for another 10 minutes.

GRAIN FREE TORTILLAS/TACO SHELLS

Luckily there are some great grain-free taco options out there. Here are a few options to check out if you want to buy them. I especially like the Siete Grain Free tortillas and Siete Taco Shells.

Though I highly recommend making your own if you have the time. It will taste so much better especially when they are nice and warm right out of the pan.

WHAT CAN I PUT ON MY TACOS 

Here are some ideas to go with the cauliflower bites.

  • shredded cabbage
  • cilantro
  • avocado
  • pepitas
  • paleo crema
  • limes
  • pickled red onion
  • shredded kale

Ingredients Method

Ingredients
  

  • 1 medium head cauliflower, cut into florets
  • 1/4 cup rice breadcrumbs
  • 1/8 cup tapioca flour
  • 1 1/2 tbsp cumin
  • 1/2 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 2 tbsp avocado oil
  • 1 tbsp almond flour
  • 1 tbsp maple syrup
  • 2 tbsp coconut aminos

Method
 

Cauliflower Florets
  1. Preheat the oven to 450F.
  2. Cut the cauliflower into medium sized florets and put them in a large bowl.
  3. In a small bowl, mix together the rice breadcrumbs, tapioca flour, cumin, smoked paprika, chili powder, garlic powder, and salt.
  4. In a small saucepan over medium heat, whisk together the avocado oil, almond butter, maple syrup, and coconut aminos. Once well blended pour over cauliflower and stir.
  5. Add the dry mixture to the bowl and stir well so that the florets are coated.
  6. Cover a baking pan with parchment paper and spray with cooking oil. Carefully put the florets on the pan.
  7. Bake the cauliflower for 20 minutes. After the first 10 minutes flip the florets to ensure an even cooking.
Tacos
  1. To serve, warm tortillas in the microwave or in a pan. Then add the cauliflower florets and top with lime juice/wedges, cilantro, cabbage, avocado, and/or pepitas.
