Vanilla Collagen Ice Cream Cups (AIP, Paleo, Dairy-Free)

Dairy-Free Vanilla Ice Cream Cups

Vanilla is an all-time favorite ice cream flavor. Imagine how it taste paired with chocolate and dates for the ultimate healthy dessert treat! These ice cream cups are easy to make and save really well in the freezer. This means there’s always a treat waiting for you at any time of the day!

One of the best parts of this other than being actually good for you is that it’s no-churn ice cream! Living in Brooklyn I have a tiny kitchen which means I keep my kitchen appliances to the minimum! All you need for this is cupcake trays and silicone muffin liners. I recommend using hard cupcake trays and lining with silicone. Silicone trays are a bit too floppy and will get a bit messy when you try to put it in the freezer.

HEALTH BENEFITS OF CASHEWS

Cashews are a powerhouse of vitamins, minerals, and other beneficial nutrients!

  • Great for blood health: copper and iron work together to help the body form and use red blood cells. This is important for body to function properly since it keeps the blood vessels, bones, nerves, and immune system working properly.
  • Protects the eyes: cashews contain high levels of lutein and zeaxanthin. It can help reduce inflammation and prevent chronic eye diseases, including age-related macular degeneration and cataracts.
  • Important for heart health: the high antioxidant content has cardio-protective benefits according to research published in the British Journal of Nutrition (Blomhoff R, Carlsen MH)
  • Helps Prevent Gallstones: there’s evidence that regularly eating nuts, such as peanuts or cashews, can help reduce your risk of developing gallstones

This is so much fun to make with kids too! It might look a little messy but it’ll taste just as good if not better! They tend to add extra chocolate :). It’s really easy with these decorating bottles.

Vanilla Collagen Ice Cream Cups (AIP, Paleo, Dairy-Free)

Ingredients Method

Ingredients
  

Vanilla Coconut Filling
  • 1 can organic heavy coconut cream
  • 2 tbsp collagen powder
  • 1/2 cup cashew nuts
  • 2 tbsp maple syrup
  • 2 tsp vanilla extract
Chocolate Date Bottom
  • 3 tbsp cocoa powder or carob powder
  • 1 tsp sea salt
  • 1/4 cup dates
  • 1 cup walnuts

Method
 

Chocolate Date Bottom
  1. Make the chocolate date bottom first since you'll be filling the bottom of the silicone cups with the paste.
  2. Add the cocoa powder, sea salt, dates, and walnuts into the blender.
  3. Put the paste on the bottom of each silicone cup, about 1/4 of inch in each cup.
Vanilla Coconut Filling
  1. In a high speed blender, mix together the heavy coconut cream, collagen powder, cashews, maple syrup, and vanilla extract.
  2. Pour into the silicone cups.
  3. Place in freezer for 1-2 hours. When solid it's ready to eat!
