Vanilla Collagen Ice Cream Cups (AIP, Paleo, Dairy-Free)

Ingredients
  

Vanilla Coconut Filling

  • 1 can organic heavy coconut cream
  • 2 tbsp collagen powder
  • 1/2 cup cashew nuts
  • 2 tbsp maple syrup
  • 2 tsp vanilla extract

Chocolate Date Bottom

  • 3 tbsp cocoa powder or carob powder
  • 1 tsp sea salt
  • 1/4 cup dates
  • 1 cup walnuts

Instructions
 

Chocolate Date Bottom

  • Make the chocolate date bottom first since you'll be filling the bottom of the silicone cups with the paste.
  • Add the cocoa powder, sea salt, dates, and walnuts into the blender.
  • Put the paste on the bottom of each silicone cup, about 1/4 of inch in each cup.

Vanilla Coconut Filling

  • In a high speed blender, mix together the heavy coconut cream, collagen powder, cashews, maple syrup, and vanilla extract.
  • Pour into the silicone cups.
  • Place in freezer for 1-2 hours. When solid it's ready to eat!
