Put lemon juice and strawberries on a high speed blender and blend on high until completely mixed.
Pour mixture into a saucepan. Add honey and gelatin and whisk together. Turn heat to low and whisk mixture until everything is blended. Continue cooking and whisking occasionally for about 5-10 minutes until it becomes thin.
Pour mixture into silicone molds or small dish. Put the molds in the fridge for about an hour until it firms up. Enjoy!
