Pineapple Salmon (Whole30, Paleo, AIP)

Ingredients
  

  • 2 salmon filets
  • 2 tbsp ghee

Sauce

  • 1 tbsp rice vinegar
  • 1/2 tbsp honey omit for Whole30
  • 1 tbsp coconut aminos
  • 2 tsp toasted sesame oil
  • 1/2 tsp dried ginger
  • 1/2 tsp fish sauce
  • 1/2 cup can crushed pineapple

Garnish

  • 2 tbsp freshly chopped cilantro
  • 1 tbsp toasted sesame seeds
  • 1 thinly sliced green onion
  • lime wedges for serving

Instructions
 

  • Mix the sauce ingredients together. Set 1/4 cup aside to top the fish once it's cooked. Pour over salmon let marinade 15 minutes - 1 hour.
  • Heat pan and add 2 tbsp ghee. Raise the heat to medium-high. Place the salmon, skin-side up in the pan. Cook until golden brown on 1 side, about 4 minutes. Turn the fish over with a spatula, pour the sauce over salmon.  Cook about 3 minutes more.
  • Top with remaining sauce. Garnish with sesame seeds and green onions and serve with lime wedges.
