Ingredients
  

  • 1/3 cup almond butter or other nut butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 4 extra ripe bananas mashed
  • 1/2 cup almond flour
  • 1/3 cup coconut flour
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt

Optional toppings

  • dairy-free mini chocolate chips
  • chopped walnuts
  • sliced bananas
  • paleo granola

Instructions
 

  • Preheat oven to 350F. Prepare muffin cups with silicone molds or cupcake liners.
  • In a large bowl mix together nut/seed butter, egg and vanilla. Add in mashed banana and combine until smooth.
  • Add in almond flour, coconut flour, baking powder, baking soda, cinnamon, and salt. Once combined fill muffin liners.
  • You can add a tsp of nut/seed butter in the middle for decoration. Or top muffins with your choice of optional toppings.
  • Bake for 12-18 minutes or until inserted toothpick comes out clean.
