Whole30 Taco Stuffed Sweet Potato

sweet potatoes

grass-fed beef
1

olive oil
2
garlic cloves, minced

chopped onion

tsp
cumin powder

tsp
coriander powder
1
tsp
paprika powder

tsp
chili powder
Toppings

tbsp
chopped cilantro
1
sliced jalapeno
1
avocado

lime
Instructions
Sweet Potatoes
Pre-heat oven to 400F.
On a baking sheet, prick sweet potatoes all over with a fork.
Bake until tender about 45 to 50 minutes. Let cool.
Ground Beef
In a skillet, add olive oil over medium high heat.
Add the ground beef and brown until no longer pink. Reduce the heat to medium and add garlic and onions. Sauté until onions are translucent.
Add all the spices and mix everything well to combine.
Stuff Sweet Potatoes
Cut the sweet potatoes in half.
Fill with taco meat.
Top with cilantro, sliced jalapenos, and avocado.
