Whole30 Taco Stuffed Sweet Potato

Ingredients
  

  • 2 medium sweet potatoes
  • 1 lb grass-fed beef
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 small chopped onion
  • 2 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp paprika powder
  • 1 tsp chili powder

Toppings

  • 3 tbsp chopped cilantro
  • 1 sliced jalapeno
  • 1 avocado
  • 1 lime

Instructions
 

Sweet Potatoes

  • Pre-heat oven to 400F.
  • On a baking sheet, prick sweet potatoes all over with a fork.
  • Bake until tender about 45 to 50 minutes. Let cool.

Ground Beef

  • In a skillet, add olive oil over medium high heat.
  • Add the ground beef and brown until no longer pink. Reduce the heat to medium and add garlic and onions. Sauté until onions are translucent.
  • Add all the spices and mix everything well to combine.

Stuff Sweet Potatoes

  • Cut the sweet potatoes in half.
  • Fill with taco meat.
  • Top with cilantro, sliced jalapenos, and avocado.
