These Paleo Cauliflower Bacon Muffins are so versatile, you can eat them at any meal. They're great to cook in batch to have on hand for the week.

Ingredients
  

  • 3 cups chopped raw cauliflower florets
  • 3 eggs
  • 1/3 cup nutritional yeast
  • 1/4 tsp salt
  • 4 slices bacon, cooked and chopped
  • 1/2 cup cassava flour
  • 1/2 tsp baking powder
  • 1/2 tsp dried basil
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1 tsp fresh chives, chopped

Instructions
 

  • Preheat oven to 375°F. Line a cupcake/muffin pan with cupcake liners. I like to use these silicone liners since you can reuse them. Spray them with oil so it doesn't stick. (This mister works great and you can refill with your favorite oil.)
  • Cook bacon in the oven or a pan. Once crispy, chop up into small pieces.
  • Combine cauliflower, eggs, nutritional yeast, baking powder, cassava flour, chopped bacon, salt, onion powder, dried basil, garlic powder, and chives (basically all of the ingredients). Mix with a large spoon or spatula until smooth.
  • Fill up each liner about 2/3 full.
  • Bake for 20-25 minutes.
