Chocolate Peanut Butter Truffles

These truffles come together super easily and just require freezing, no baking needed!

Ingredients
  

  • 3/4 cup peanut butter
  • 6 pitted dates
  • 1/2 cup almond flour
  • 1 tsp salt
  • 6 tbsps water

Chocolate

  • 1 cup dark chocolate chips
  • 2 tbsp coconut oil
  • 2 tbsp coconut milk optional (makes the chocolate creamier)
  • flaky sea salt to sprinkle on top

Instructions
 

  • In a high powered blender or food processor add the pitted dates first and water, blend. Add the peanut butter, dates, almond flour, and salt. Blend on high speed until smooth.
  • Scoop into tablespoon-sized pieces and roll into the shape of a ball and place on a plate covered with parchment or wax paper. Repeat until all of the peanut butter mixture is used.
  • Put in freezer while you make the chocolate.
  • Mix all of the chocolate ingredients in a small pot. Cook on low temperature for a few minutes until the chocolate is melted. Stir to combine.
  • Roll the peanut balls into the chocolate mixture. Coat evenly.
  • Place the balls on parchment or wax paper and freeze for 20 minutes.
  • Sprinkle with salt if desired and enjoy!
  • Store these in the freezer or refrigerator.
