Chocolate Peanut Butter Truffles
These truffles come together super easily and just require freezing, no baking needed!
- 3/4 cup peanut butter
- 6 pitted dates
- 1/2 cup almond flour
- 1 tsp salt
- 6 tbsps water
Chocolate
- 1 cup dark chocolate chips
- 2 tbsp coconut oil
- 2 tbsp coconut milk optional (makes the chocolate creamier)
- flaky sea salt to sprinkle on top
In a high powered blender or food processor add the pitted dates first and water, blend. Add the peanut butter, dates, almond flour, and salt. Blend on high speed until smooth.
Scoop into tablespoon-sized pieces and roll into the shape of a ball and place on a plate covered with parchment or wax paper. Repeat until all of the peanut butter mixture is used.
Put in freezer while you make the chocolate.
Mix all of the chocolate ingredients in a small pot. Cook on low temperature for a few minutes until the chocolate is melted. Stir to combine.
Roll the peanut balls into the chocolate mixture. Coat evenly.
Place the balls on parchment or wax paper and freeze for 20 minutes.
Sprinkle with salt if desired and enjoy!
Store these in the freezer or refrigerator.
