Hidden Veggie Meatballs

These meatballs are an amazing way to sneak in those veggies!
Prep Time 10 minutes
Cook Time 20 minutes
Servings: 4 people

Ingredients
  

  • 1 carrot, grated
  • 1/2 zucchini, grated
  • 1 tsp garlic salt or 2 minced garlic cloves
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1 egg
  • 1 lb ground pork

Method
 

  1. Mix all of the ingredients together, do not over mix.
  2. Shape mixture into meatballs, approximately 1 1/2 tablespoons each.
  3. Bake 18-20 minutes or until cooked through. 
AIR FRYER
  1. Cook in air fryer at 400F 6 minutes on each side or until internal temperature is at 160F
OVEN
  1. Preheat oven to 400F.
  2. Place meatballs on lined baking sheet and cook for 18-25 minutes.
PAN FRIED
  1. Heat 1 tbsp of lard, avocado oil, or olive oil
  2. Once hot cook meatballs about 6 minutes per side. Don't put too many meatballs in the pan if you want them crispy.
