Paleo Banana Nut Muffins (AIP)

Ingredients
  

  • 1/3 cup almond butter or other nut butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 4 extra ripe bananas mashed
  • 1/2 cup almond flour
  • 1/3 cup coconut flour
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
Optional toppings
  • dairy-free mini chocolate chips
  • chopped walnuts
  • sliced bananas
  • paleo granola

Method
 

  1. Preheat oven to 350F. Prepare muffin cups with silicone molds or cupcake liners.
  2. In a large bowl mix together nut/seed butter, egg and vanilla. Add in mashed banana and combine until smooth.
  3. Add in almond flour, coconut flour, baking powder, baking soda, cinnamon, and salt. Once combined fill muffin liners.
  4. You can add a tsp of nut/seed butter in the middle for decoration. Or top muffins with your choice of optional toppings.
  5. Bake for 12-18 minutes or until inserted toothpick comes out clean.
