Nut-free pesto made with basil and spinach.

Ingredients
  

  • 3/4 cup pumpkin seeds (shelled, roasted)
  • 1/4 cup grated parmesan (optional) not AIP
  • 2 cloves garlic
  • 1 cup (2oz) packed fresh basil
  • 2 cups packed fresh spinach
  • 2 tbsp fresh lemon juice
  • 1/2 cup olive oil
  • 1 tsp salt

Equipment

  • Blender

Method
 

  1. Put all of the ingredients in a high speed blender and process until smooth.
  2. If you prefer a thinner pesto, add more olive oil.
