Whole30 Taco Stuffed Sweet Potato

Looking for a fun alternative to the classic tortilla. Try out this paleo version with sweet potatoes!

Ingredients
  

  • 2 medium sweet potatoes
  • 1 lb grass-fed beef
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 small chopped onion
  • 2 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp paprika powder
  • 1 tsp chili powder
Toppings
  • 3 tbsp chopped cilantro
  • 1 sliced jalapeno
  • 1 avocado
  • 1 lime

Method
 

Sweet Potatoes
  1. Pre-heat oven to 400F.
  2. On a baking sheet, prick sweet potatoes all over with a fork.
  3. Bake until tender about 45 to 50 minutes. Let cool.
Ground Beef
  1. In a skillet, add olive oil over medium high heat.
  2. Add the ground beef and brown until no longer pink. Reduce the heat to medium and add garlic and onions. Sauté until onions are translucent.
  3. Add all the spices and mix everything well to combine.
Stuff Sweet Potatoes
  1. Cut the sweet potatoes in half.
  2. Fill with taco meat.
  3. Top with cilantro, sliced jalapenos, and avocado.
